some greens may be bitter. I suffered something like that but only with a mixture of purchased Provencal herbs (it seemed to me that lavender in the mixture was the problem). of the good oregano.

baking soda is for reducing acidity as far as I know. were the diced tomatoes you added extra sour? try to buy whole canned tomatoes that you can crush / chop. the diced ones or even some sauces may taste weird.
can you taste dried oregano now to see how it is?
