I wanted a lighter eggplant salad, so I combined them with avocado.
- 250 gr ripe eggplant, drained well
- 3 pieces Hass avocado
- 2-3 tablespoons olive oil
- salt
- ground black pepper
- lemon juice
- 3 cloves of garlic

RECIPE PREPARATION Eggplant salad with avocado and garlic:
Baked eggplants, well drained, chop them with a glass or wooden knife.
Cut the avocado in half, remove the seeds, then use a spoon to remove the core.
Squeeze the lemon juice over the avocado and mix it.
Mix the eggplant with avocado, salt, pepper and olive oil. Finally add the finely chopped garlic.
We serve toast with toast.
