Feta-Stuffed Chicken Burgers
Here’s a delightful twist on the average turkey burger — it’s chicken instead, and stuffed with feta! It’s perfect for entertaining or a quick and easy weeknight meal.
- 1 pound extra-lean ground chicken breast
- 1 tablespoon fresh oregano
- 1/4 teaspoon garlic powder
- 7 tablespoons crumbled feta cheese
- 4 reduced-calorie hamburger rolls
- 1 cup thickly sliced romaine lettuce
- 2/3 cups water-packed roasted red peppers, drained and sliced
- 5 small black olives, sliced

- 1 pound lean ground beef
- ½ teaspoon Worcestershire sauce
- 1 teaspoon dried parsley
- salt and pepper to taste
- 1 cup crumbled feta cheese
Preheat an outdoor grill for medium heat, and lightly oil the grate.
Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without press the edges together to seal the cheese into the center.
Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

- 1 pound ground chicken
- ½ cup dry bread crumbs
- 1 egg
- 1 tablespoon lemon juice
- 2 tablespoons chopped sun-dried tomatoes
- 1 tablespoon chopped fresh basil
- 3 teaspoons chopped fresh oregano
- salt and pepper to taste
- 2 ounces crumbled feta cheese
Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
Mix the chicken, bread crumbs, egg, lemon juice, sun-dried tomatoes, basil, oregano, salt, and pepper together in a bowl form the mixture into 5 patties. Divide the feta cheese between the 5 patties place a portion of the feta cheese atop each patty and fold the chicken mixture around the cheese so that the cheese is in the center.
Cook on the preheated grill until no longer pink on the inside and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (75 degrees C).

This recipe was adapted from my favorite cook book EVER: Best-Loved Philadelphia Appetizers, Dips, Sides, Entrees, Desserts, and More!
20 mushrooms (about 1 pound)
1 tablespoon butter
4oz crumbled reduced fat feta cheese
3 oz reduced fat cream cheese, softened
Preheat broiler. Remove stems from mushrooms and chop. Set whole mushrooms aside. Cook stems, stirring in butter on medium heat for a few minutes (until tender).
Add in feta cheese and cream cheese. Mix well, cook until cream cheese is melted. Spoon evenly into mushroom caps on broiler pan.
Broil 3 minutes or until golden brown serve warm.

My restaurant recipe request column in the St. Louis Post-Dispatch is a kick to write. I’m loving the stories from local restaurant families, the imagination of local chefs, the new techniques and ingredients I’m learning.
Every so often, a restaurant’s recipe is a house secret, not to be shared. That happened a few weeks ago – and the sandwich sounded so good, I decided to invent my own recipe! It turned out as a Greek-style burger, with feta and fresh spinach so instead of mayonnaise and ketchup, I mixed up a batch of Tzatziki Sauce.

I know I am hopeless when comes to him. I have no idea why we are so attracted to each other. He did inspire this great healthy chicken burgers with ground chicken.
I would not have thought to do low fat burgers if it wasn&rsquot for his idea. He texted me back, chicken burger. He loves chicken. Well, the chicken burger suggestion it did spark my imagination.
